Confit de Canard
Packed in duck fat and stored in a tin, duck confit is an unlikely gourmet treat. But a gourmet treat it truly is!
Confit de Canard is basically duck legs which have been cooked to tender perfection, then preserved in duck fat.
For most people making your own preserved duck is a bit of a challenge (but for the sake of completeness we have added a recipe at the bottom of the recipes page). For the rest of us, the wonderful product coming in a tin can from France is the perfect solution to providing a very special but incredibly simple gourmet meal.
Confit is popular as an impressive but easy dinner party option to wow your guests. Being so simple to prepare and needing no refrigeration means that it's also a good choice for folk with limited cooking facilities or refrigeration, like yachties on the long voyages typical around the South Pacific, or for holiday makers enjoying time at a traditional kiwi bach, well away from the conveniences of the city. If you're a tramper planning a crazy candle-lit formal dinner in a DOC hut atop a mountain somewhere, then this is the perfect thing for you, too.
...Just don't forget your can opener.
Cassoulet au Confit de Canard
In case you are likely to forget your can opener, we also offer Cassoulet au Cofit de Canard. (It has a ring-pull top!) Calling cassoulet "stew" is like calling Champagne "beverage". Comprising confit de canard, Toulouse sausage, white haricot beans in a rich casserole sauce for Heat-&-Eat simplicity. Gourmet dining shouldn't be this easy.
